Protected Designation of Origin (PDO) - It is granted to products whose quality or characteristics are due to the geographical environment with its inherent natural and human factors and the production, processing and preparation is always done in that bounded geographical area.

Protected Geographical Indication (PGI) - Are those products that have some specific quality reputation or other characteristics attributable to the geographical origin and the production, processing or preparation takes place in the bounded geographical area that also takes its name.

Traditional Specialties Guaranteed (TSG) - Applies to products that have specific features different from other foods of the same category. Furthermore, these agricultural products or foodstuffs must be produced using traditional raw materials or submit a composition, method of production or traditional transformation.

Organic Farming - It can be defined simply as a collection of agricultural techniques which usually excludes the use in agriculture and animal husbandry, of synthetic chemicals such as fertilizers, pesticides, etc, with the aim of preserving the environment, maintain or increase soil fertility and provide food with all its natural properties.
